Yield: 4 loaves @ 500 grams

Procedure:

  • Place all ingredients except shortening and butter in the mixer and mix for 2 minutes.
  • Add shortening and butter, continue mixing until fully developed.
  • Rest the dough for 15-20 minutes.
  • Cut into 500-gram pieces.
  • Place into baking pan (9 x 5 x 3 inches).
  • Proof for 212 hours or until desired height is reached. Proof box temperature 31-33°C. Relative humidity 80-85%.
  • Bake at 160°C for 25 minutes or until light brown.
